Nick and Lottie of La Tartine Bakery are considered pioneers of sourdough baking in Australia. After discovering the practice in France in the 80s, they returned to Sydney to be the first specialty sourdough bakery. Using only organic ingredients, they make over 12 different types of sourdough with flour sourced from wholegrain milling in Gunnada NSW.
