Crispy Sushi Rice Waffle, for your summer entertaining
Tommy Prosser, Crustacean Nation
Ingredients
Tuna
– 300g sashimi-grade tuna loin
– 200ml buttermilk (Pepe Saya)
– 1 tbsp soy sauce (Enokido Miso)
– Zest of 1 lemon
– 1 tsp salt
Seasoned Sushi Rice Waffle
– 300g sushi rice
– 360ml water
– 3 tbsp rice vinegar
– 1 tbsp sugar
– ½ tsp salt
Macadamia
Macadamia butter (Hand ’N’ Hoe Organic Macadamias)
Tuna Salad
– 1 cucumber (Block 11 Organics), julienned
– 1 carrot, julienned and salted (Block 11 Organics)
– 30g macadamias (Hand ’N’ Hoe Organic Macadamias), toasted and chopped
– Handful of mixed fresh herbs (Darling Mills Farm)
– Juice of 1 lemon (Block 11 Organics)
– 2 tbsp olive oil (Alto Olives)
Method
Buttermilk-Cured Tuna (5-Minute Cure)
- Mix buttermilk, soy sauce, lemon zest, and salt in a bowl.
- Dice the tuna
- Submerge the tuna in the mixture for 5 minutes.
Seasoned Sushi Rice Waffles
- Cook rice with water (use a rice cooker or stovetop).
- Mix rice vinegar, sugar, and salt while the rice is hot. Fold gently into the rice.
- Let cool slightly, then form into waffle-sized portions.
- Preheat a waffle iron, lightly oil, and cook rice portions until golden and crisp.
Macadamia Butter
- Spread a layer of macadamia butter onto each cooked waffle while still warm making sure to fill the little squares
Tuna Salad
- Salt the julienned carrot and cucumber lightly and set aside for 15 minutes. Drain the excess liquid that comes out.
- Combine carrot, cucumber, diced tuna, toasted macadamias, and fresh herbs in a bowl.
- Toss with lemon juice and olive oil.
To Assemble
- Spread macadamia butter over a sushi rice waffle.
- Top with a generous portion of the tuna salad.
- Garnish with extra toasted macadamias and herbs if desired.
