Reverence Cocktail Recipe

50ml gin – Demoiselle Distillery
3ml absinthe – Demoiselle Distillery
15ml lemon – Food by Fiat
1 mandarin – Food by Fiat
Zest of bergamot – Food by Fiat
15g coriander seed – Spice Zen
1tbs honey – Maya Sunny Honey
20ml Coriander seed and mandarin rind syrup
1. Place 15g of coriander seeds in a pot and lightly toast till fragrant.
2. Add a tablespoon of good quality honey, 150ml water and 100g of caster sugar. Add mandarin zest and bring to a light simmer for 5 minutes.
3. Let cool and strain. Store cold.
4. Combine all cocktail ingredients into the blender and blend well. Transfer to a cocktail shaker and shake with ice. Fine strain over ice in a rocks glass and garnish with a citrus leaf and freeze dried mandarins.
