35ml Campari
35ml fruit wine
20ml fresh citrus
10ml Demoiselle Limoncello
100ml soda
Method
Build in a wine glass/highball glass

½ a bottle of Rose Vermouth
2 peaches
2 apricots
15g lemon balm
5g anise myrtle
2 pods of black cardamon
Over a low heat, on a Smeg cook top, gently infuse fruit offcuts into vermouth. You don’t want the liquid to simmer, as alcohol evaporates before water (good for cooking, not for drinking!). Feel free to experiment with some spices. Leave for about 30 minutes, stirring occasionally. Fine strain through a chinois, and let it chill in the fridge.
Fresh Citrus
Using the Smeg citrus juicer, juice either lemon or lime, straining to remove pulp. Reserve some extra for some non alcoholic summer lemonade, and remember to peel the fruit first so you can also use the skins!
