The Bread & Butter Project

The Bread & Butter Project began in 2013 by Paul Allan and Jessica Grynberg, founders of Bourke St Bakery. The social enterprise provides training to people seeking refuge and asylum in Australia to become qualified bakers to help create work opportunities and alleviate poverty. Trainees from Afghanistan, Iran, Iraq, Myanmar, Sierra Leone, Syria, Pakistan, Fiji, Thailand and Sri Lanka have undertaken a 6 to 8 month traineeship, which includes on-the-job bakery training, TAFE accreditation, English-language tutoring and job readiness support. The Bread & Butter Project produces and sells artisan baked goods, including, sourdoughs, brioche, pastries, speciality loaves and roles.
