Chef Series: Masterclass
Carriageworks, in partnership with Smeg Australia, welcomes Ross Lusted, for the second Masterclass event of 2018.
A master of fine dining, the former Executive Chef of Rockpool and co-owner of The Bridge Room will showcase four recipes that have been created using seasonal produce from the weekly Farmers Market. Sharing tips for creating easily adaptable masterpieces at home, Ross will explore the theme of ‘Salt and its Many Forms’, looking at how different variants of this house-hold staple and its natural forms can bring new dimensions to a dish. He will also be cooking in his trademark style, applying Asian culinary techniques to Western cuisine.
Ross’ dishes will include:
– Kombu cured coral trout with set goat’s milk and fuyu persimmon
– Kurobuta butter milk pork with chickpea miso
– Organic rice with shitake ketchup and mushroom dashi
– Salt baked celeriac
The two hour Masterclass will be cooked on a state of the art SMEG kitchen and will allow for interaction and questions from the audience. The session will be co-hosted by Myffy Rigby, Good Food Guide Editor.
About Ross Lusted
After an extensive career in award winning restaurants and hotels, including roles as Executive Chef of Rockpool, Park Hyatt Sydney’s harbourkitchen&bar, Singapore’s Mezza9 and most recently as head of Food & Beverage Development for Amanresorts, Ross returned home in 2011 to open his first restaurant – The Bridge Room.
Ross has since been awarded three Chef Hats by Sydney Morning Herald’s Good Food Guide 2017, three stars and #8 on the Top 100 Restaurants in Australia by Australian Gourmet Traveler and Hottest Restaurant in Australia 2016 by The Australian, amongst many other accolades.
